Fortina Restaurant

Fortina, Armonk, NY:  Chef Christian Petroni and his two partners, John Nealon and Rob Krauss opened Fortina restaurant in Armonk NY last April. Maverick Consultants worked with Chef Christian and his partners to design a restaurant with an open kitchen, two wood burning ovens and a long bar.

Fortina: On the corner of the building that also has the Del Cicco supermarket, in Armonk NY, Fortina is a 130 seat restaurant with a 24 seat bar. The restaurant can be partitioned to create a private dining event room.  Outside patio dining seating will also be added at a future date.

The Fortina menu offers classic Neapolitan pizzas, as well as an offering of salads, pastas and roasted meats and vegetables, with a modern Italian twist.

Challenge: Create a restaurant, where the kitchen, bar and seating, all form part of a comfortable active environment.

With 130 seats, as well as private dining and outdoor patio, the cooking platforms and methods have to be able to produce the menu items consistently with the highest quality, and do it with minimum ticket times.

Solution: The space was laid out with a long bar facing the entrance, with two wood burning ovens on the left corner of the bar, facing the main entrance and the dining area. The bar was designed to seat 24 people, and offers a full display of craft whiskeys, cocktails and beers, as well as a complete wine list. The wines are offered on tap, as well as Negroni cocktails.

There is a chefs table facing the kitchen and plating and pick up table.

The two wood burning ovens are side by side, one with a pizza prep area on the right, and on the left of the ovens is a cooking suite with fryer, plancha, and a pasta station (open burners and a pasta cooker).

The second oven is used for steaks, octopus, fish, chicken, vegetables. All cooking times are calculated to give a ticket time of less than 6 minutes.

This was accomplished by Maverick working with the Chef on the recipes and cooking methods, using combi ovens and other specialty equipment to tenderize and prepare it for the finishing oven.
